500 mL bottle, great presentation in the elegant bottle. A three year blend, bottled in 2025.

Golden, honey-lemon body with a nice head that has very good retention and lace which are all well within style parameters. Looks good.

Nose has an incredibly sharp, acidic vinegar, apple note, it’s a little aggressive even given the style. Sinus clearing, and not in a particularly good way.

This has the overlaid sour note that one would expect, but the beer isn’t nearly dry enough IMO. it leads to an odd, full and flabby body, with an ethanoic acid veneer on top. The beer feels too  much like there are two parts to it, rather than a full-formed and melded experience. The acidic presence is appropriate enough, but the rounded-out body seems at war with what should be a drier finish, cleaner, and simpler effect on the palate. It all sits a bit oddly if I’m honest.

There’s something to work with here, but this has a long way to go before it can be held up as anything that I would recommend (and yes, I know you’re not waiting on my recommendation). This either needs a re-blend, some age, maybe more batches, something else, or perhaps all of the above, before I would consider it approachable. In its current state this isn’t for me.

2Toms has a coolship and I believe that the process is essentially ‘authentic’ (to the extent that could be, 4000 miles away from the source), and I know that Tom knows what he’s doing, so the question becomes is this wise to attempt, or is it even possible? TBH it’s incredibly commendable for Tom to even attempt this at all, and for that he should be congratulated, but in the end this tastes like exactly what it is, a Gueuze made in Indiana, USA. There’s a long way to go here.
