So, a 10% lambic. What do we have here? Nice, golden orange pour. Head is great for the style and ABV and has some decent retention. Some moderate lace, somewhat better than expected given the style and ABV.
The main feature off the bat is the relative viscosity and depth of the mouthfeel. It is very large for the style and very present. Quite sweet up front, with a lovely, large, well-rounded edge. Classic fruit base with some serious zesty lemon carbonic bitterness.
There’s a little cheese element that comes off at the start but that breaks down quickly to a more traditional funk. Smooth as silk but with a bitter edge.
The acidity is somehow countered by the incredible mouthfeel which is so deep. The viscosity is such a feature here that it seems to add to the taste element in a way that I have never experienced in a beer. It’s really incredible.
