Fantôme Ectôpläsmic Schwilly Stix
4.59 out of 5.00 | Excellent

The standard Fantôme presentation, capped and corked. Nice pop on opening.

Pretty, pale golden color with a pillowy, high head. Not a great deal of lace, but good retention of the head.

There really is a noticeable, clean citrusy (lime/lemon/floral/bright) nose as this warms, and it is tremendous! This is carried forward into the tastes. There’s a very light, herbal bitterness underlying everything, and it’s very typically Fantôme. Over the top of that we get a lot of the lime notes that the nose promises.

The Motueka hops and coriander make for a tempered bitterness but it’s not light, rather “under control”. As the beer warms it ‘sweetens’ somewhat, although what that really means is more lime comes through, and the hop bitterness backs off a bit.

As it warms there is a very large Brett character that shines through. Not sure what the origin of it is, but it brings with it a spritzy, bright mouthfeel. The beer drinks a little above the advertised 6%, but with Dany who knows the truth?

This beer feels, young, vibrant and alive. I have absolutely no idea what it will do over time, and according to a number of reports it’s changing rapidly and often, so this might be fun!
