Pours a pale, straw golden color, resembling more of a chardonnay color than does the regular Chocolat version. Addition of yeast in the final pour creates a clouded version of the original pour.

Nose has a tremendous grape-like, fruity acidity, and is absolutely fantastic. This is followed by medicinal, Cinzano Bianco CLASSIC Fantôme notes as it warms. Great.

The tastes follow the nose with some quite dry (non-sweet) grape juice. This is a sophisticated beer. Very vinous and with an extremely delicate front, middle and back end. Light drying tannins are the most prominent elements here, but they never overwhelm the beer. Perfectly carbonated, the beer dances on the tongue and leaves a little footprint every time that it touches. Still basically zero cocoa or chili for me, except perhaps in the final aftertaste where the beer “warms” the lips a touch.

This is a way more delicate, gentle beer than Dany is renowned for, and it’s quite frankly a triumph. If you love a vinous, grape-like beer than this will surely satisfy, although it still has all of the hallmarks of Fantôme madness with herbal notes running throughout. There’s a little calcium carbonate mineral quality to the beer as well, with classic Fantôme earthiness in the back end and finish too. On some later, warmer pours, the lemon note is strong. Whatever particular flavor profile that is being showcased at any point in time, the beer remains oh so soft in the mouth.

This has a label that declares 6%, but we all know how reliable that is (virtually ALL of Fantôme’s beers have 8% numbers attached to them regardless of variation), but it does drink very easily so perhaps in this case that’s accurate.

Brilliant beer, better than the “regular” chocolat, and is a remarkably gentle beer but also never straying too far from Dany’s guidance.
